Anaheim peppers are a classic New Mexican–style chili known for their long, tapered shape and mild, earthy flavor. The smooth green peppers grow 6–8 inches long and develop thick, tender flesh that is perfect for roasting and cooking.
Milder than many chili peppers, Anaheims offer a gentle heat with a slightly sweet, smoky flavor when roasted. They are commonly used for chile rellenos, salsas, grilled dishes, and traditional Southwestern cuisine. When allowed to fully ripen red and dried, they are known as California chiles.
